2 to 2 ½ pounds of ground beef
1 large sweet onion, sliced thin
1 tbsp olive oil
1 pat of butter
Old Croc Sharp or Extra Sharp Cheddar
8 slices of honey maple deli ham
4 pretzel rolls
Salt and pepper for taste
1/3 cup of mayo
2 tbsps grainy mustard
To start, whisk mayo and mustard in a small bowl. Refrigerate.
Heat olive oil in a large sauté pan over medium/high heat. Add butter and melt. Add the onions and stir occasionally for about 30 minutes. Onions will become a dark brown color. Tip: If onions begin to burn, occasionally stir in a small amount of water while cooking. Once browned, keep warm in pan on low heat.
Season the ground beef with salt and pepper and mold it into 8 patties. Cook them over medium heat for 5 minutes, on both sides. In the last minute of cooking, top with a couple slices of Old Croc, let melt.
Spread sauce on bottom of bun, layer each bun with 2 slices of ham, 1 cheeseburger patty, caramelized onions, another patty, caramelized onions and more sauce. Dig in!!
