Cheddary Pumpkin Mac


16 oz macaroni, cooked
1/4 c. butter
1/4 c. flour
2 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg
1/2 tsp. mustard powder
1 c. canned pumpkin
2 c. Old Croc Extra Sharp Cheddar, shredded
Optional: a pinch of cayenne pepper

Heat oven to 350. In a saucepan, melt butter on low heat, then add flour and stir constantly for one minute. Remove from heat and add milk. Return to heat and stir constantly until thickened. Add pumpkin, spices and 1 3/4 cups of cheddar; stir until cheese has melted. Mix in macaroni. Pour mixture into a greased baking dish and top with remaining cheese. Bake 25 minutes or until golden brown & bubbly.
