Croc & Brew Hot Dip


3 tbsps unsalted butter
3 tbsps flour
1 bottle amber beer
1 tsp Dijon mustard
1-1/2 cup Old Croc Sharp or Smoked Sharp Cheddar, grated
Salt & pepper to taste

Melt butter over medium heat. Stir in flour and cook for approximately 1 minute. Whisk in beer. Lower heat. Stir in Dijon, cheese, salt & pepper to taste. Heat through until bubbly. Serve warm with pretzels and crusty bread.
