- 2 tbsps olive oil
- 1 yellow onion sliced thin
- Pinch of salt
- 2 thin sliced chicken breast cooked and diced
- 2 flour tortillas
- 1 ⁄2 cup Old Croc Sharp or
- Extra Sharp Cheddar cheese shredded
Place a large skillet over medium high heat. Heat 1 tbsp olive oil. Add the onion and a pinch of salt. Toss to coat, and then turn heat to low. Stir occasionally, cooking for 20-30 minutes until onions are golden brown. Remove from pan and set aside.
Turn heat to medium, add 1 tbsp and a tortilla. Once hot, add a layer of cheese. Add chicken caramelized onions and top with 2 layer of cheese. Cook two minutes, flip and cook 2 minutes more.
Cut into triangles and serve.
