Fiesta Burger


1 to 1 ½ pounds of ground beef
Old Croc Sharp or Extra Sharp Cheddar
Avocado, sliced
4 tomatoes, diced
1/2 cup red onion, diced
2 cloves garlic, minced
1 jalapeno, seeded and minced
2 tbsp lime juice
2 tbsp olive oil
1/3 cup cilantro, chopped
Salt & pepper to taste
4 Buns

Season the ground beef with salt and pepper and mold it into 4 patties. Cook them over medium heat for 5 minutes, on both sides. Combine diced tomatoes, red onion, garlic, jalapeno, cilantro, lime juice and oil. (Add jalapeno to taste; include the seeds for even more heat!) Add salt & pepper to taste. When burgers are almost done grilling, top each patty with Old Croc Sharp Cheddar. Remove from grill and assemble burgers on buns, topping with avocado slices and a few generous spoonfuls of salsa.
