Spicy Cheddar Latkes


  • 6 cups potatoes grated
  • 1 cup onion grated
  • 1 cup Old Croc Sharp Cheddar grated
  • 1/4 cup flour or matzo meal
  • 2 eggs beaten
  • ½ tsp baking powder
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp adobo powder
  • 2 tsps chili powder
  • Canola oil for frying


  1. Press excess liquid out of shredded potato & onion, then place into a mixing bowl. Add Old Croc cheese, flour, egg, baking powder and spices. Mix until incorporated. 

  2. Coat a frying pan with canola oil, and heat over medium heat. Working in batches, drop scoops of potato mixture into the pan, fry 2-3 minutes per side, or until golden. 

  3. Serve warm, and top with sour cream!
