Spinach and Bacon Pasta Salad


1 box cooked Penne pasta10 slices cooked bacon, chopped
5 oz fresh baby spinach
4 oz Old Croc Sharp Cheddar, chunked or shaved
¼ Red onion, sliced thin (soak slices in water for 15 minutes to mellow the flavor)
3 oz jarred roasted red peppers, sliced in strips

½ tbsp soy sauce
½ tbsp Dijon mustard
1/3 cup balsamic vinegar
1/3 cup olive oil
Salt & pepper to taste

In a large bowl, mix together the pasta, bacon, spinach, cheese, onion and peppers. In a medium bowl, whisk together the soy, Dijon and vinegar. Slowly drizzle in the olive oil, while whisking to emulsify. Pour dressing over pasta salad, mix well. Chill for ½ hour before serving.
