Cheddar & Artichoke Pizza

A cheesy sharp cheddar sauce tops this California style pizza. Creamy artichokes and fresh spinach add a bright touch.

Ingredients
- For the crust:
- 1/2 tsp dry active yeast
- 3/4 cup lukewarm water
- 1/4 tsp sugar
- 2 Cups all purpose flour
- 3/4 tsp salt
- 3 1/2 Tbs olive oil divided
- For the cream sauce:
- 1/2 stick butter
- 3/4 cup heavy cream
- 1 cup freshly grated Old Croc Sharp Cheddar Cheese
- 1/2 tsp white pepper
- For the toppings:
- 1 1/2 Cups freshly grated Old Croc Sharp Cheddar Cheese divided
- 1 can artichoke hearts quartered
- 1 Cup baby spinach leaves
- 1/2 tsp red chili flakes
Instructions
- Place the yeast & sugar in the warm water. Stir, let sit 15 min. Mix flour, salt, 3 tbs of the oil, and the yeasty water to form a ball. Coat a bowl with remaining olive oil and place dough in it. Cover and let rise for 1 hour.
- Preheat oven to 500. Stretch dough onto a pizza pan. Par bake for 4 minutes.
- Make the sauce by melting the butter in a sauce pan. Add the cream, cheddar, and pepper. Heat over medium low until warm. Spread the cheese sauce on the crust. Top with 1 1/4 Cups Cheddar, the artichoke hearts, and the spinach. Bake another four to six minutes until the crust is golden. Top the pie with the remaining cheddar and the chili flakes.
