Aussome Cheese Puffs
Surprise your guests with these savory, cheesy cream puffs. They're a little smoky, a lot of creamy and so yummy for any party.

Ingredients
- 1/2 cup water
- 1/2 cup coconut milk
- 4 oz butter
- 1 cup all-purpose flour
- 4 eggs
- Pinch salt
- Pinch pepper
- 1/2 teaspoon paprika
- 1 1/4 cups grated Old Croc Smoked Sharp Cheddar divided
Filling
- 10 oz cream cheese
- 1 cup grated Old Croc Smoked Sharp Cheddar
- 1/4 cup shredded sun dried tomatoes in oil
- 1 teaspoon chopped chives
- 1 teaspoon minced shallot
- 2 tablespoons finely chopped jalapeño peppers
- 6 tablespoons sour cream
Instructions
Pre-heat oven to 400F.
In a medium pot bring water, coconut milk and butter to a boil. Reduce heat and add flour, mixing with a wooden spoon to incorporate into liquid. Mixture will have the consistency of mashed potatoes. Remove from pot and place in a bowl. Allow to cool for 2 minutes. Add eggs one at a time, stirring well to make sure they are fully blended into dough. Add salt, pepper, paprika and 1 cup grated cheese.
Fill a piping bag with mixture and pipe 16 mounds onto a baking sheet lined with parchment paper. Sprinkle remaining 1/4 cup grated cheese on top of puffs. Bake on middle shelf of oven for approx. 20 minutes or until puffs are a warm golden brown.
Remove from Oven and allow to cool for at least 15 minutes.
To prepare the filling, drain oil from sun dried tomatoes then mix filling ingredients together in a small bowl. When puffs are cool, slice in half lengthwise then place a tablespoon of filling in each one. Serve immediately.
