Cheddary Crocadillas

The easy cheesy quesadillas whip up in no time.  They make a great lunch or after school snack.

  • 2 tbsps olive oil
  • 1 yellow onion sliced thin
  • Pinch of salt
  • 2 thin sliced chicken breast cooked and diced
  • 2 flour tortillas
  • 1 ⁄2 cup Old Croc Sharp or
  • Extra Sharp Cheddar cheese shredded


  1. Place a large skillet over medium­ high heat. Heat 1 tbsp olive oil. Add the onion and a pinch of salt. Toss to coat, and then turn heat to low. Stir occasionally, cooking for 20-30 minutes until onions are golden brown. Remove from pan and set aside.

  2. Turn heat to medium, add 1 tbsp and a tortilla. Once hot, add a layer of cheese. Add chicken caramelized onions and top with 2 layer of cheese. Cook two minutes, flip and cook 2 minutes more. 

  3. Cut into triangles and serve.
