Double Croc Fried Chicken Mac

Ingredients

  • 1 cup all-purpose flour plus 1 tbsp
  • 2 tbsp seasoned salt
  • 1/2 tsp cayenne pepper
  • 3 eggs
  • 1 1/2 lbs chicken breast tenders
  • 1 cup plain panko bread crumbs
  • vegetable oil as needed
  • 1 tbsp olive oil
  • 1 red bell pepper chopped
  • 1 onion chopped
  • 1 tbsp butter
  • 2 cups milk
  • 1/2 cup heavy cream
  • 2 cups Old Croc Extra Sharp Cheddar grated
  • 1 cup Old Croc Smoked Sharp Cheddar grated
  • ½ tsp nutmeg
  • 1 1/2 lbs penne pasta cooked
  • 3 slices bacon cooked and crumbled
  • parsley chopped, for topping

Instructions

  1. Preheat oven to 350.
  2. In a bowl add 1 cup of flour, salt and cayenne. In another bowl beat eggs.
  3. Coat chicken in flour mixture. After chicken is coated add bread crumbs to flour mixture. Dip chicken in egg, then into bread crumb mixture.
  4. Heat 1/4” oil to 350 in a skillet over medium high heat. Add chicken. Cook for 2 minutes. Turn chicken and cook 2 minutes or until browned. Remove from skillet.
  5. In a skillet add 1 tbsp of olive oil over medium heat. Cook pepper and onion for 4 minutes or until tender.
  6. In a saucepan over medium heat melt butter and whisk in 1 tbsp flour. Add milk and cream, stirring constantly. Add cheeses and nutmeg, stirring constantly for 5 minutes until thickened.
  7. Cut chicken into pieces. In a baking dish, layer half of the pasta, chicken, pepper and onion mixture, and bacon, Top with half of the cheese sauce, then repeat layer. Add remaining cheese sauce on top.
  8. Bake for 20 minutes. Sprinkle with parsley.
