Old Croc Cheddar Half and Half Puff Pastry Pizza

  • 13.2 ounce package puff pastry on parchment thawed
  • 3/4 cup prepared pizza sauce
  • 2 cloves garlic crushed
  • 1 teaspoon dried oregano
  • 1 1/2 cups Old Croc Sharp White Cheddar shredded
  • 3 ounces mini pepperoni slices
  • 2 ounces manzanilla pitted olives sliced in half
  • 3 ounces pancetta sliced very thin
  • 1/3 cup pineapple bits
  • 1/3 cup red onion sliced thin
  • 2 tablespoons chives minced
  • 8 large basil leaves chiffonade
  • Crushed red pepper or Aleppo pepper flakes


  1. Preheat oven to 400 degrees F.
  2. Unroll dough with parchment paper attached directly on sheet pan. Prick thoroughly with a fork and bake 12 minutes.
  3. In a small bowl mix pizza sauce, garlic and oregano then spread evenly over pastry to within 1/2 inch of the edges. Top evenly with cheese. Sprinkle one half with pepperoni and olives and the other half wit pancetta, pineapple and onion. Bake 5-7 minutes until pastry is brown and cheese is melted. Sprinkle chives on pepperoni half and basil on pancetta half. Cut pizza into 8 squares then cut squares on diagonal. Sprinkle with crushed red or Aleppo pepper if desired
