Cheddary Quiche Bites

These super easy quiche bites are loaded with veggies.  Serve them at your next brunch or make a batch for weekday breakfast on-the-go.

  • 1 frozen pie crust
  • 3 large eggs beaten
  • ½ cup half & half
  • 7 oz Old Croc Sharp or Extra Sharp Cheddar Cheese
  • Thick sliced ham diced
  • ½ yellow onion
  • ½ large red bell pepper
  • Salt and pepper


  1. Preheat oven to 350°. Spray a mini muffin tin with non-stick cooking spray. Cut small circles out of pie crust with a mini cookie cutter. Place in muffin tins, prick bottom of crust with a fork. Pre-bake for 15 minutes until slightly golden in color.
  2. Whisk eggs, half & half, salt & pepper until fluffy. Stir in cheese, ham, onion and bell pepper. Ladle into piecrusts and bake approximately 20 minutes until eggs are set. Serve with a side salad with a light vinaigrette.
