These Cheddar Bay Butter Swim Biscuits are golden, buttery, and loaded with sharp cheddar cheese. Soft on the inside, crisp on the edges, and topped with a garlicky, parsley-infused butter, they are perfect for holiday tables, weeknight dinners, or any time you want cheesy, melt-in-your-mouth comfort.
Ingredients:
For the Biscuits:
- ½ cup (1 stick) unsalted butter
- 2 ½ cups all-purpose flour
- 1 tbsp baking powder
- 1 tbsp granulated sugar
- 1 tsp garlic powder
- 1 tsp salt
- 2 cups cold buttermilk
- 1 ½–2 cups Old Croc Sharp Cheddar, shredded (freshly grated for best melt)
- 2 tbsp fresh parsley, chopped (optional for color)
- 2 tbsp butter, melted
- ¼ tsp garlic powder
- ½ tsp fresh parsley
Directions
- Preheat the oven to 450°F (230°C).
- In a large bowl, whisk together the flour, baking powder, sugar, garlic powder, and salt.
- Fold in the shredded cheddar and parsley until evenly distributed. Pour in the cold buttermilk and stir gently until just combined. Do not overmix.
- Melt 1 stick of butter in a microwave-safe bowl and pour into a 9×9-inch baking dish.
- Pour the biscuit dough directly into the dish with the melted butter. Gently spread it out with a spatula. It should look rustic and buttery, with the dough sitting in the butter (do not mix).
- Lightly score the top into 9 squares with a butter knife to make slicing easier after baking.
- Bake for 25 minutes, or until golden brown on top and crisp around the edges. You’ll see the butter bubbling as it bakes — that’s the magic happening!
- While hot, whisk together the Cheddar Bay Butter Topping ingredients and brush generously over the biscuits.
