Cheddar Shortbread Cookies

These Cheddar Shortbread Cookies are a savory twist on a classic holiday favorite. Made with sharp cheddar, warm spices, and finished with herbs, seeds, and nuts, they bake up crisp, buttery, and full of flavor. Perfect for holiday gatherings, cheese boards, or a cozy snack by the fire, they’re as charming as they are delicious.
Ingredients:
- 2 cups flour
- 1/2 tsp salt
- 1/2 tsp dry mustard
- 1/2 tsp cayenne
- 1 cup butter, room temp
- 7oz Old Croc sharp cheddar cheese, shredded
- Sesame seeds
- Fresh rosemary, chopped
- Pistachios, chopped
Directions
- Mix together the flour and spices, set aside.
- Beat the butter with the shredded cheese until smooth.
- Add the dry ingredients and mix together until a soft dough forms.
- Wrap the dough in plastic wrap and refrigerate 2 hours
- Preheat oven to 350° F
- Lightly flour work surface and roll dough out to 1/4” thickness
- Cut into fun shapes and sprinkle with your favorite herbs, seeds and nuts
- Bake 12-15 minutes until they start to turn golden brown
