Turkey Cheddar Enchilada Crocs

Ingredients:
- 2 Tablespoons olive oil
- 1 1/2 pounds lean ground turkey
- 2 teaspoons minced garlic
- 1 teaspoon salt
- 2 teaspoons ground cumin
- 1 tablespoon chili powder
- 1 four ounce can diced green chilies
- 1 six ounce block Old Croc Smoked Sharp Cheddar grated, divided
- 2 ten ounce cans red enchilada sauce
- 8 four inch whole wheat flour tortillas
- 2 Tablespoons fresh cilantro chopped
- 2 scallions sliced thin
- Preparation
- Preheat oven to 350 degrees.
Directions
- Set a large skillet over medium heat. Add the olive oil and turkey. Brown turkey until cooked through. Add garlic and cook one more minute.
- Add salt, cumin, chili powder, and green chilies. Stir to combine, then add 1/2 of the cheese. Stir just until cheese is melted, then remove mixture from heat.
- Pour 2 to 3 tablespoons of enchilada sauce into the bottoms of 4 individual casserole dishes (alternatively you can use one large casserole dish).
- Place a tortilla into each casserole dish. Divide turkey & cheese mixture evenly amongst the dishes. Pour more enchilada sauce on top of the meat before topping with another tortilla.
- Pour the remaining enchilada sauce over the top tortilla in each dish. Top with the remaining cheese.
- Place casserole dishes onto a sheet pan and bake for 20 minutes until hot and bubbly. Top with the cilantro and scallions before serving.
