Crispy on the outside, creamy on the inside, these Twice-Baked Potatoes are the ultimate comfort food. Fluffy potato centers are mixed with sour cream, butter, cheddar, and green onions, then stuffed back into their golden skins and topped with bacon and melted cheese. Perfect for weeknights, game days, or holiday sides, this classic recipe is always a crowd-pleaser.

Ingredients:

  • 4 large baking potatoes
  • 8 slices bacon
  • 1 cup sour cream
  • ½ cup milk
  • 4 tablespoons butter
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup shredded sharp Cheddar cheese, divided
  • 8 green onions, sliced, divided

Directions

  1. Prep & bake the potatoes: Preheat the oven to 400°F (200°C).Cut the potatoes in half lengthwise and place them cut side down on a parchment-lined baking sheet.Drizzle or brush lightly with oil. Bake for 40 minutes, or until the skins are crisp and the centers are tender. Let cool slightly until safe to handle.
  2. Cook the bacon:While the potatoes bake, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels, crumble, and set aside.
  3. Make the filling: Scoop the fluffy centers out of each potato half into a large bowl – save those crispy skins! In a mixing bowl, add sour cream, milk, butter, salt, pepper, ½ cup cheese, and half the green onions. Mash or mix until smooth and creamy.
  4. Stuff & top:Spoon the creamy filling back into the potato skins. Top each half with the remaining cheese, green onions, and crumbled bacon.
  5. Bake again:Return to the oven and bake for about 15 minutes, until the cheese is melted and bubbly! Serve hot and enjoy the ultimate comfort bite!
