Spinach & Bacon Pasta Salad

This fresh vegetable pasta salad gets tons of flavor from the salty Sharp Cheddar and tangy dressing.

  • 1 box cooked Penne pasta
  • 10 slices cooked bacon chopped
  • 5 oz fresh baby spinach
  • 4 oz Old Croc Sharp Cheddar chunked or shaved
  • ¼ red onion sliced thin (soak slices in water for 15 minutes to mellow the flavor)
  • 3 oz jarred roasted red peppers sliced in strips
  • Dressing:
  • ½ tbsp soy sauce
  • ½ tbsp Dijon mustard
  • 1/3 cup balsamic vinegar
  • 1/3 cup olive oil
  • Salt & pepper to taste


  1. In a large bowl, mix together the pasta, bacon, spinach, cheese, onion and peppers. In a medium bowl, whisk together the soy, Dijon and vinegar. Slowly drizzle in the olive oil, while whisking to emulsify. Pour dressing over pasta salad, mix well. 

  2. Chill for ½ hour before serving.
