Spinach & Bacon Pasta Salad
This fresh vegetable pasta salad gets tons of flavor from the salty Sharp Cheddar and tangy dressing.

Ingredients
- 1 box cooked Penne pasta
- 10 slices cooked bacon chopped
- 5 oz fresh baby spinach
- 4 oz Old Croc Sharp Cheddar chunked or shaved
- ¼ red onion sliced thin (soak slices in water for 15 minutes to mellow the flavor)
- 3 oz jarred roasted red peppers sliced in strips
- Dressing:
- ½ tbsp soy sauce
- ½ tbsp Dijon mustard
- 1/3 cup balsamic vinegar
- 1/3 cup olive oil
- Salt & pepper to taste
Instructions
In a large bowl, mix together the pasta, bacon, spinach, cheese, onion and peppers. In a medium bowl, whisk together the soy, Dijon and vinegar. Slowly drizzle in the olive oil, while whisking to emulsify. Pour dressing over pasta salad, mix well.
Chill for ½ hour before serving.
