Steak & Cheddar Panini
Sweet onions and red peppers top this hearty steak sandwich with melted Extra Sharp Cheddar.
Ingredients
- 1 ½ lbs flank steak or skirt steak
- 1 pkg Old Croc Sharp or Extra Sharp Cheddar Cheese
- 10 oz fresh baby spinach leaves
- Dijon Mustard
- Salt & pepper
- 1 12 oz jar of roasted red peppers, drained and sliced into thin strips.
- 2 tbsp olive oil
- 2 sweet onions cut into ½-inch slices
- 8 slices ciabatta bread or other crusty bread of choice
Instructions

Preheat grill pan on medium/high heat.

Season both side of steak with salt and pepper. Drizzle with olive oil.

Cook steak 4-5 minutes on 1st side, flip and cook 3-4 minutes more.

Transfer to a cutting board, let rest 5 minutes, then thinly slice against the grain.

Reduce heat to low, add 1 tbsp oil and saute spinach until soft.

Spread each slice of bread with Dijon mustard, layer with sliced steak, Old Croc Cheddar Cheese, sautéed spinach and roasted red peppers.

Place each sandwich back onto oiled grill pan, press down with spatula, grill until bread is browned and crisp.
