Cheddar and Turkey Tortilla Bites
OLD CROC CHEDDAR AND TURKEY TORTILLA BITES
Seasoned turkey breast and sharp cheddar adds big flavors to this light and easy snack.
- 3 extra large tortillas approx. 12" diameter
- 2 1/2 cups cooked shredded Cajun seasoned turkey breast
- If cajun seasoned turkey is not available use any cooked turkey and add your favorite seasonings to make it your own.
- 6 cups shredded Old Croc Sharp Cheddar
- 1 red bell pepper
- 2 tomatillos
- 1/4 cup chopped cilantro
- 3 tablespoons lime juice
- 1 cup sour cream
Pre-heat oven to 350F.
Lay out tortillas on a counter top.
Using a wide glass for the shape and size, cut out 8 rounds from each tortilla.
Place rounds in greased muffin trays, pressing down to form a bowl shape.
Distribute half the cheese between the muffin cups then top with the turkey.
Finish with remaining cheese.
Bake in oven for approx. 8 minutes. Meanwhile prepare the vegetables.
Chop bell pepper and tomatillos into very small pieces and place in a bowl with lime juice and cilantro.
When cups are ready remove from oven and top with vegetables sour cream.
Serve warm with remaining salsa on the side.
