These super easy quiche bites are loaded with veggies. Serve them at your next brunch or make a batch for weekday breakfast on-the-go.

1frozen pie crust
½cuphalf & half
7ozOld Croc Sharp or Extra Sharp Cheddar Cheese
Thick sliced hamdiced
½large red bell pepper
Salt and pepper
Preheat oven to 350°. Spray a mini muffin tin with non-stick cooking spray. Cut small circles out of pie crust with a mini cookie cutter. Place in muffin tins, prick bottom of crust with a fork. Pre-bake for 15 minutes until slightly golden in color.
Whisk eggs, half & half, salt & pepper until fluffy. Stir in cheese, ham, onion and bell pepper. Ladle into piecrusts and bake approximately 20 minutes until eggs are set. Serve with a side salad with a light vinaigrette.
