A cheesy sharp cheddar sauce tops this California style pizza. Creamy artichokes and fresh spinach add a bright touch.

For the crust:
1/2tspdry active yeast
2Cupsall purpose flour
3 1/2Tbsolive oildivided
For the cream sauce:
1cupfreshly grated Old Croc Sharp Cheddar Cheese
For the toppings:
1 1/2Cupsfreshly grated Old Croc Sharp Cheddar Cheesedivided
1can artichoke heartsquartered
1Cupbaby spinach leaves
1/2tspred chili flakes
Place the yeast & sugar in the warm water. Stir, let sit 15 min. Mix flour, salt, 3 tbs of the oil, and the yeasty water to form a ball. Coat a bowl with remaining olive oil and place dough in it. Cover and let rise for 1 hour.
Preheat oven to 500. Stretch dough onto a pizza pan. Par bake for 4 minutes.
Make the sauce by melting the butter in a sauce pan. Add the cream, cheddar, and pepper. Heat over medium low until warm. Spread the cheese sauce on the crust. Top with 1 1/4 Cups Cheddar, the artichoke hearts, and the spinach. Bake another four to six minutes until the crust is golden. Top the pie with the remaining cheddar and the chili flakes.
